CINNAMON (CASSIA)


Cassia is an evergreen tree originating in southern China, and widely cultivated there as well as in Southern and Eastern Asia. It is one of several species of Cinnamon used primarily for their aromatic inner bark, which is used as a spice.Cassia grows mostly in Yen Bai and Thanh Hoa provinces of Vietnam, where there are favorable weather conditions as well as soil in order to grow high-quality cassia trees.

STAR ANISE


Star anise is the dried, star shaped fruit of Illicium verum. It is used to flavour vegetables, meat, and to marinate meat. It is also used in perfumery. The essential oil of star anise is used to flavour soft drinks, bakery products and liquors. With its anti-bacterial, carminative, diuretic and stomachic properties, star anise is considered useful for flatulence and spasmodic asthma. Since the flavor of star anise is very strong, most star anise used in cooking is broken or powdered, as a whole star anise overpowers most dishes.

CASHEW KERNEL


The cashew tree is an evergreen tree that grows in tropical climates. It produces cashew nuts (also called cashew kernels, or simply cashews) and cashew apples. The cashew can be used as a whole for garnishing dishes, or can be grounded into a paste to be used as a base for curry sauces. It is also commonly used in powdered form. Currently, Vietnam is the top producer of cashew kernels thanks to favorable climate and other environmental conditions.
